Hair styling tips?

Hi I'm intending to attempt a an MH custom for my sister hoping to turn Catty Noir into Minnie Mouse.

I've had an idea that instead of molding ears I'm going to reroot and make 'ears' with her hair (I was hoping for something like Throne Coming Blondie locks hair but without the ends sticking out at the back), but a bit unsure how to go about the styling or what kind of hair would be best to use. I've looked on hair websites and there's so many different kinds it's confusing.
